What Is Schnitzel?

A schnitzel is a thin slice of meat. The meat is usually made thin by pounding with a meat tenderizer or mallet.

Most commonly, the meat is breaded before deep frying. Breaded schnitzel is popular in many countries and can be made using veal, pork, chicken, mutton, beef, or turkey.

The German word schnitzel is a diminutive of sniz, ‘to slice’. The name Wiener Schnitzel, thed world’s most famous schnitzel, first appeared in European kitchens in 1845.

Wiener Schnitzel is a popular Viennese dish made of veal and traditionally garnished with a slice of lemon and either potato salad or cabbage coleslaw.

Today, the English term schnitzel means in general all types of breaded, fried, flat pieces of meat. The original Austrian recipe is very similar to the dish escalope in France, tonkatsu in Japan, cotoletta in Italy, kotlet schabowy in Poland, milanesa in Argentina, chuleta valluna in Colombia and chicken fried steak of the United States.

The Chicken Schnitzel Sandwich can be found all over the world today thanks to US fast food chains like McDonald’s, Burger King, KFC, Popeyes, and Wendy’s.

My Family Loves Chicken Schnitzel Sandwiches

I love traveling to Europe!

Chicken Schnitzel is one of my favourite dishes to order when visiting Germany, Austria and Switzerland, where it is common on restaurant menus.

After returning home from my 4th trip to Germany I decided to make homemade schnitzel for my family and serve it as a sandwich.

I knew my parents would love this homemade Chicken Schnitzel Sandwich recipe because they enjoy breaded chicken fingers, creamy coleslaw and gourmet sandwiches.

This recipe can be enjoyed any time of the year but we particularly love to serve them as a special treat for birthdays or dinners enjoyed in the summer on the backyard patio.

We all know kids love crispy fried chicken so the recipe is a huge success with eaters of all ages.

If you’re hosting a large dinner party we suggest frying the schnitzel in the morning and keeping them cool in the fridge until an hour before your guests arrive. You can then reheat the schnitzels in the oven until warm and crispy.

Assembly is simple. Slather the bottom of the bun with honey barbecue sauce, top with a lettuce leaf, chicken schnitzel, pile of cabbage slaw, sandwich together and serve!

This yummy Chicken Schnitzel Sandwich is quick and easy to make at home. We’ve included a few tips for first time schnitzel makers!

  • We suggest shallow frying the chicken schnitzel in a large skillet.
  • We’ve used boneless skinless chicken breasts in this recipe but you can substitute for chicken thighs if you prefer.
  • We’ve used sesame seeds in the breading, which gives the schnitzel an attractive appearance. If you’re worried about sesame allergies feel free to omit.
  • We’ve used red cabbage in the coleslaw to give the sandwich a pop of colour but you can substitute for green cabbage or napa cabbage if you prefer.
  • We’ve used a classic barbecue sauce, which we’ve sweetened with honey but if you like spicy food feel free to use a hot barbecue sauce or smoky chipotle.
  • We like to serve chicken schnitzel between a brioche hamburger bun but you can substitue for your favourite sandwich bread if you prefer.
  • We’ve added a crunchy Boston Lettuce Leaf but you can substitute for head lettuce, romaine or arugula.
  • Feel free to add additional ingredients to your sandwich such as sliced red onion, pickled jalapeno peppers, or a slice of cheese.

Ingredients

Chicken Schnitzel

  • 4 Boneless Skinless Breasts butterflied
  • 4 Eggs
  • Kosher Salt and Black Pepper
  • 1 cup All Purpose Flour
  • 2 cups Panko Crumbs
  • 1 cup Sesame Seeds
  • Canola Oil for frying

Tartar Slaw

  • 1 cup Mayo
  • 3 tbsp Fresh Dill chopped
  • 1 tbsp Capers drained and chopped
  • 1 tbsp Dill Pickle chopped
  • 1 tbsp Dijon Mustard
  • 2 tsp Lemon Juice
  • 1 tsp White Wine Vinegar
  • Kosher Salt and Pepper
  • 1/2 head Red Cabbage finely sliced

Sandwich Assembly

  • 2 tbsp Barbecue Sauce
  • 2 tbsp Honey
  • 4 Brioche Buns toasted
  • 4 Boston Lettuce Leaves

Instructions

  • Place the butterflied chicken breasts between two sheets of plastic wrap and use a rolling pin and meat mallet to pound them out until they are 1/4 inch thick. Cut each cutlet in half.
  • In a shallow bowl, beat the eggs with a pinch of kosher salt. Place the flour in a second shallow bowl and season with salt and pepper. In a third shallow mixing bowl mix together panko, sesame seeds and salt and pepper to taste.
  • Working with one chicken cutlet at a time, place the chicken cutlets in flour, dust off any excess, then dredge through beaten egg. Let any excess drip off before placing the chicken in the panko-sesame mixture. Gently press the panko onto the chicken to ensure it is well coated. Transfer to a plate.
  • In a large skillet or wok, heat about 1/2 inch of canola oil over medium-high heat. Add 1 piece of breaded chicken and fry until crispy and golden brown. Transfer the cooked breaded chicken cutlets to a cooling rack and season with salt. Repeat with the remaining chicken.
  • In a large mixing bowl, whisk together the mayo, dill, capers, pickle, mustard, lemon juice, vinegar, and pinch of salt and pepper. Add the cabbage and massage the sauce with your hands to ensure the cabbage is fully coated and begins to soften.
  • To assemble, in a small mixing bowl stir together the barbecue sauce and honey. On each bun, build a sandwich with a leaf of butter lettuce, 2 pieces of crispy chicken schnitzel, drizzle of barbecue honey sauce and a scoop of tartar slaw.
