Strapatsada is a popular dish in Greece, due to the availability and low cost of its ingredients. The name comes from the Italian word “strapazzare,” which roughly translates to “breaking an egg and mixing it while cooking.”
It is often served straight out of a hot skillet for breakfast, lunch or as a light snack. The dish is also known as kagianas, koskosela or menemeni.
Preparing strapatsada eggs is quick and easy. Chopped or pureed tomatoes are cooked in a skillet with olive oil and pepper until they become a thick sauce. Beaten eggs are then slowly added with crumbled feta cheese, which thickens into a creamy sauce. Basil, oregano, thyme or other herbs are often used to add final seasoning.

My family are big fans of healthy Mediterranean cuisine.
We love cooking flavourful dishes from Greece, Bosnia, Croatia, Egypt, France, Israel, Italy, Lebanon, Malta, Morocco, Spain, and Turkey.
I first had the opportunity to eat Strapatsada while ordering breakfast at a hotel in Mykonos. I fell in love with the dishes creamy texture and vibrant flavour.
Once I returned home from Greece I wanted to recreate the dish for my family as they appreciate a simple and comforting breakfast.
It was a warm summer morning at our cottage in Muskoka when I whipped up these simple Strapatsada Eggs.
I knew my parents would love the dish because they enjoy egg dishes at brunch, salty feta cheese, sweet tomatoes and crunchy sourdough toast. We had a lush basil plant growing in our herb garden so the meal was very much farm to table!

- We’ve used plum tomatoes in this recipe but you can substitue for grape tomatoes or beefsteak tomatoes.
- We suggest using Greek-style cow’s milk feta cheese. You can purchase sheep’s or goat’s milk feta if you prefer.
- If you’re hosting a large brunch spread scoop the Strapatsada into a bowl with a spoon and allow guests to serve themselves.

How To Make Greek Strapatsada Eggs
Strapatsada Greek Scrambled Eggs
Equipment
- French knife
- Nonstick Skillet
- measuring cups
- measuring spoons
- Spatula or Wooden Spoon
Ingredients
- 10 oz Tomatoes
- 3 tbsp Olive Oil
- 1 tbsp Tomato Paste
- Pinch Kosher Salt
- Pinch White Sugar
- 2 Eggs
- 1 oz Cows Milk Feta Cheese
- 1/4 cup Basil
- 4 Slices Sourdough Bread or Baguette toasted
Instructions
- Cut the tomatoes in half and cut out the core to discard. Slice into chunks.
- Warm the oil in a non-stick skillet then add the tomato chunks over medium heat. Stir occasionally for 5 minutes, once the tomatoes have broken down into the oil.
- Add the tomato paste, salt, sugar, and cook for another 5 minutes. Crack in the eggs and stir, as if you were scrambling them, until they are creamy.
- Meanwhile, toast your sourdough bread slices.
- Take the pan off the heat, crumble the feta cheese over the mixture and sprinkle with basil. Add a dollop of the tomato scramble on your toast and slather. Enjoy hot.
