What Is A Grilled Peach and Burrata Salad?

Burrata is an Italian cow milk cheese made from mozzarella and cream. The outer casing is solid cheese, while the inside contains stracciatella and cream, giving it an unusual, soft texture.

Burrata is a typical product of Murgia in the south of Italy. It may have origins dating back to 1900 on the Bianchini brothers farm in the city of Andria. More recent records have shown that Lorenzo Bianchini of the Piana Padura farm first developed the product in 1956.

Burrata is considered one of Italy’s most decadent cheeses and its steeper price makes it the perfect imported product to serve at a special celebration.

There’s no better way to serve a ball of creamy burrata cheese then as the star of a colourful summer salad with grilled peaches.

My Family Loves Grilled Peaches and Burrata

I love cooking Italian food for my family.

I first prepared this Grilled Peach Burrata Salad recipe on a sunny summer day at our cottage in Muskoka. During peak barbecue season I visited our local farmers market and found a pile of perfectly juicy peaches screaming my name!

This summer burrata recipe is quick and easy to make at home. Here are some tips for first time salad tossers.

  • We’ve used fuzzy peaches in this recipe but you can substitute with nectarines if you prefer.
  • Before firing up the barbecue be sure to thoroughly clean the grill so the tender peach halves do not stick and break apart when cooking.
  • We’ve used burrata cheese in this recipe but you can substitue with fresh mozzarella or bocconcini.
  • We’ve flavoured the salad with fresh mint but you can use other tender summer herbs like basil or dill.
  • We like to drizzle honey over the salad before serving but you can substitute with balsamic reduction syrup.
  • Hazelnuts are a popular nut in Italy and offer a delightful crunch in this salad. You can substitute with other roasted nuts like pecans, walnuts or pine nuts if you prefer.

Ingredients

  • 4 Ripe Peaches
  • 1/2 cup Fresh Mint Leaves
  • 1 Burrata Cheese
  • 3 tbsp Honey
  • 1/2 cup Roasted Hazelnuts
  • 1 tbsp Olive Oil
  • Kosher Salt + Black Pepper

Instructions

  • Preheat a grill to medium high heat (375-450F).
  • Cut 4 peaches in half and remove the pits. Drizzle with olive oil and grill until charred and warmed through, 3 minutes per side.
  • In the centre of a shallow bowl or platter place the burrata cheese ball.
  • Transfer the grilled peaches to the platter, placing the warm peach halves around the burrata.
  • Drizzle with honey and sprinkle with mint leaves.
  • Roughly chop hazelnuts and sprinkle over the platter along with salt and pepper.
