What Is Ferrero Rocher?

Ferrero Cake is a decadent dessert featuring Italy’s beloved chocolate hazelnut truffles.

Ferrero Rocher is a chocolate and hazelnut confectionery, introduced in 1979 and produced by the Italian company Ferrero. Michele Ferrero is credited as the product’s creator, who named it after a grotto in the Roman Catholic shrine of Lourdes, Rocher de Massabielle. Rocher comes from French and means rock or boulder.

Each Ferrero Rocher truffle is covered in golden foil and placed into a paper liner. It is sold worldwide, particularly at duty free shops in airports, and holds a strong cultural presence, in part because of its association with Christmas. Roughly 3.6 billion Ferrero Rochers are sold each year in over 42 countries, 60% of which are sold the last 3 months of the year.

The popular chocolate confection consists of a whole roasted hazelnut encased in a thin wafer shell filled with hazelnut chocolate and covered in milk chocolate and chopped hazelnuts.

Our Ferrero Rocher Cake recipe is inspired by the popular Italian truffles.

The decadent layer cake is prepared with a light and crunchy sponge that is flavoured with Frangelico Hazelnut Liqueur, ground hazelnuts, and cocoa powder.

What I love most about traveling to Italy is the opportunity to sample unique dishes in each region and city. The dishes in Tuscany (Florence, Pisa, Volterra, Saturnia, Pitigliano, Sorano, Montalcino, Siena) are unique from what you’d find in Venice, Modena, Milan, Rome and the Amalfi Coast.

Our Ferrero Rocher Cake recipe is the perfect homage to northern Italy, where hazelnuts are used in abundance by local chocolatiers and pastry chefs.

Known as Gianduja, the Italian chocolate confection synonymous with Torino and Piemonte is a homogenous mixture of chocolate and at least 30% ground hazelnuts. Gianduja can be made into chocolate bars, truffles, or spreads. It’s also used to favlour gelato and all kinds of desserts like this decadent layer cake.

My Family Loves Homemade Ferrero Cake

My family loves Ferrero Rocher truffles!

My dad is a doctor and every holiday season he’d receive heaps of chocolates, bonbons and candies from his patients as a thank you. My sister and I would eagerly wait for him to get home each day leading up to the Christmas break, excited to see if a festive box of Ferrero Rocher chocolates was waiting to be unwrapped.

Since I know my family loves Ferrero Rocher candies I was excited to recipe test a truly decadent cake featuring roasted hazelnuts and chocolate. I added additional chocolate hazelnut flavour by incorporating Frangelico and Nutella into the recipe.

Many of my family and friends rank this recipe as the best chocolate hazelnut cake they’ve ever tasted! The layer cake has a perfectly crunchy and chewy texture, packed with the mouth-watering flavour of Ferrero Rocher.

We like to make this recipe during the festive holiday season when we’re looking to showcase an eye-popping cake on our Christmas dessert table. It’s also a great chocolate cake to serve on Mother’s Day, Father’a Day and Valentine’s Day!

Ferrero Cake Ingredients

  • Eggs
  • White Sugar
  • Frangelico
  • Ground Hazelnuts
  • All Purpose Flour
  • Cocoa Powder
  • Baking Powder
  • Unsalted butter

Ferrero Cake Directions

Follow our step-by-step recipe instructions and you’ll have a surprisingly luxurious chocolate hazelnut cake to enjoy in no time!

Ferrero Rocher Cake

  • In a stand up mixer whisk eggs with sugar and Frangelico until they are three times in volume, light and fluffy.
  • Sift flour, cocoa and baking powder. Mix in with ground nuts.
  • Using spatula, fold in dry ingredients by thirds. Butter all sides of a 9 inch baking pan, pour batter into the dish. Bake at 350F for approximately 40 minutes. Let cool on a rack.

Nutella Icing

  • Meanwhile make the icing. Dissolve chocolate chips in a double boiler or microwave. Let chocolate cool to a room temperature. Combine chocolate together with butter and Nutella. Whisk until combined.

Ferrero Cake Assembly

  • Slice the cake into two layers. Break wafers into small pieces. Spread icing over each layer evenly, sprinkle wafers over the cream.
  • Decorate outside of the cake, using the left over icing and hazelnuts. Slice ferrero rocher candy in half and decorate on the edge of the cake.
  • Store cake in the fridge until ready to slice and serve.

  • We suggest using a high quality rubber spatula so it’s easy to scrape the batter from the mixing bowl into the cake pan.
  • You’ll save yourself time and energy by using a stand mixer to beat the cake batter ingredients together. You can also use a handheld egg beater or whisk as an alternative.
  • Prepare this recipe using a circular cake pan so you can easily slide the cake out after it has baked.

What To Serve With Ferrero Cake

We suggest serving this decadent Ferrero Cake as a dessert for Mother’s Day, Valentine’s Day, Christmas or at a birthday party.

We like to pair a slice of this rich chocolate hazelnut cake with a scoop of ice cream or gelato as well as an assortment of berries like strawberries, raspberries and blueberries. The acidity in the berries contrasts nicely with the richness of the chocolate and nuts.

Storing Cake

If you have leftover Ferrero Cake transfer it to a plate and cover with a cake dome for 2-3 days in the fridge.

This cake recipe store in the freezer really well so if you want to enjoy it several weeks or months later simply slice and store in a Ziplock bag or large freezer-safe container.
