What Is Ninja Creami Chocolate Ice Cream?

Homemade ice cream is traditionally produced by churning the base ingredients in a frozen tub. A paddle slowly scrapes the interior of the frozen bowl, magically transforming the liquid ingredients into the sweet scoops kids and adults love to enjoy on a hot summer day.

I first heard about the Ninja Creami while flipping through TikTok. Fitness influencers raved about the healthy high-protein recipes you can create and food bloggers exclaimed how easy it was to make perfectly creamy ice cream in minutes. So I obviously had to get the Ninja Creami to test it out for myself!

The Ninja Creami sells for around $200. Its technology is based on the $10,000 Pacojet, which is famously used in Michelin-star kitchens to make perfectly smooth sorbets and gelatos.

Ninja Kitchen has essentially produced a very affordable Pacojet, offering curious foodies fun new ways to make homemade ice cream, gelato and frozen yogurt.

The Ninja Creami and Pacojet create a smooth ice cream by working in the opposite manner of a traditional homemade ice cream maker. The base ingredients are combined together then added to a tub, frozen for 24 hours until rock solid then made smooth thanks to the powerful blades in the Ninja Creami.

What Is A Ninja Creami?

Ninja Creami Chocolate Ice Cream Ingredients

Most Ninja Creami Chocolate Ice Cream recipes I read online are the traditional ice custard variety featuring eggs, whipping cream, whole milk, sugar and flavourings. Classic chocolate ice cream is typically flavoured with cocoa, melted bakers chocolate or chocolate syrup.

I wanted to make a healthy version that is also super simple to make at home. It only requiring 3 ingredients, which you likely already have in your pantry and fridge!

Purchase a carton of your favourite chocolate milk next time you’re at the grocery store then whisk in a tablespoon of instant chocolate pudding mix (the gelatine within helps make the texture smooth).

A fun way to make this recipe “triple chocolate” is by adding chopped chocolate bar or chocolate chips during the final Mix-ins stage. I like to use dark chocolate or milk chocolate by Whittaker’s. You can make a version that is “chocolate to the 4th degree” by adding a swirl of chocolate sauce before serving.

Our recipe is basically an ice milk, which was first popularized in the 90s when Pizza Hut added a soft serve ice milk maker to its buffet offerings. Ice Milk is a frozen dessert made with frozen dairy milk, but with less milk fat than regular ice cream (typically prepared with whole milk and whipping cream).

In America, ice milk is defined as containing less than 10% milk fat and the same sweetener amount as ice cream. The product can also be labeled as “low fat ice cream or light ice cream.”

Step-by-Step Directions

  • Add the chocolate milk and instant pudding mix to the Ninja Creami pint container. Mix well with a whisk or immersion blender and freeze for 24 hours.
  • Put the frozen pint container into the Ninja Creami ice cream maker and press the ice cream button.
  • Use the re-spin setting until smooth and creamy. If the ice cream is still crumblier than you want it before the final spin, add a glug of milk before re-spinning.
  • Create a small hole in the centre with a spoon and then add in chopped chocolate bar or chocolate chips. Press the mix-in button until combined.
  • Scoop and enjoy!

Substitutions & Alternatives

While it’s easiest to make this recipe using a store bought carton of chocolate milk you can also prepare a DIY version.

Simply whisk together 1 3/4 cup of 1 or 2% dairy milk with chocolate syrup or a mixture of 1 tbsp cocoa with 2 tbsp corn syrup, to achieve a homemade chocolate milk base.

We prefer using dairy milk when making ice cream but if you’re vegan or lactose intolerant you may want to test out a Ninja Creami Chocolate Ice Cream recipe that is dairy free.

Feel free to test out similar proportions of non-dairy milks such as oat milk, soy milk, almond milk, cashew milk or coconut milk, with a vegan chocolate syrup or mixture of organic cocoa powder with agave syrup.

Ninja Creami Chocolate Ice Cream Recipe Tips

If it’s your first time making chocolate ice cream in a Ninja Creami we suggest reading our step by step recipe from top to bottom. Familiarize yourself with each step before you start getting set up in the kitchen.

Here are some helpful tips and tricks for first time Ninja Creami users:

  • There are several Ninja Creami models now available, so purchase the machine that fits best with your price point and needs.
  • We used a 1% chocolate milk in this recipe but you can make your frozen dessert a bit more decadent by using chocolate milk that is 2% or 4% milk fat.
  • We’ve added 1 tablespoon of instant pudding mix to help create the ideal scooping texture of an ice cream. As alternative you can use 1/4 tsp of xanthan gum.
  • Do not fill the pint past the max fill line. The liquid will expand during freezing, and you want the blade to have room to spin when you place pint of solid bases into the machine.
  • If for some reason your Ninja Creami tub moves or slides in the freezer and the surface isn’t flat use a spoon (warmed under hot water in your sink) to help scrape and flatten the surface. Never add a tub into the appliance that is not flat as this can cause the blades to break.
  • I’ve found that freezing the pint without the lid helps prevent the large peak from forming in the middle. If yours does have a peak, it’s okay. You’ll just want to shave off some of it with a metal spoon so the top is flat and level.
  • The Ninja Creami pint container, once frozen, will be inserted into an outer bowl. The outer bowl lid contains the blade, which locks into place over the bowl. You can easily clean the blade after use by using the latch at the top of the lid.
  • After going through one cycle on the lite ice cream setting do a re-spin and the texture should transform from crumbly to smooth. If the product is still crumbly add a glug of chocolate milk and re-spin and that should resolve the issue.
  • Sometimes you can avoid a re-spin if you let the pint sit out at room temperature for a few minutes before running the first cycle.
  • Once you have achieved a creamy texture you can scoop a well into the centre of the tub and add your favourite mix-ins like fruit, cookies and candy. Hit mix-ins and then grab a spoon, scoop and enjoy!

Ninja Creami Mix-Ins

It’s easy to add additional flavours and textures to your ice cream by selecting the mix-ins button on the Ninja Creami machine. Here are some of our favourite mix-ins:

  • Fresh Fruit: like raspberries, strawberries, blueberries, sliced mango or ripe pear.
  • Chocolate: finely chopped chocolate bars or chocolate chips.
  • Cookies: homemade chocolate chip or store bought Oreos.
  • Nuts: from roasted almonds to candied peanuts.
  • Nut Butter: peanut butter or almond butter.
  • Candy: M&Ms, peanut butter cups, marshmallows or sprinkles. Avoid gummy based candies as they turn rock solid in the freezer and can crack your teeth.
  • Sauces: fudge sauce, caramel, butterscotch, strawberry coulis.

While you can certainly enjoy chocolate ice cream on its own in a bowl or on a cone, here are some fun ideas on how to serve this recipe the next time you have company coming over for dinner.

Storing Ninja Creami Chocolate Ice Cream

We always recommend making Ninja Creami Chocolate Ice Cream moments before you want to serve it as it’s perfectly smooth and easy to scoop once moved from the machine.

If you have leftover ice cream you can store it in the freezer again. Note that the contents will lose their scoop-able texture and once removed from the freezer will be solid as ice once again. You’ll need to re-spin the tub once more so it’s the desired texture and easy to eat.

Be sure to use a spoon to smooth out and level the top of the leftover ice cream in the Ninja Creami pint container before placing back in the freezer. Freezing with a level top will let you easily re-spin it in the Ninja Creami when you want to eat it again. This method will give you that same creamy texture.

Please note, if you added mix-ins, they’ll get chopped up when you re-spin.

If you want to free up your Ninja Creami pint container, you can transfer the leftover ice cream to another container and freeze. For this method, you won’t be able to re-spin it but letting it thaw on the container for a few minutes or zapping it in the microwave for just 5-10 seconds softens it and the texture is similar to freshly spun.
