I’ve had the opportunity to eat my way through Playa Del Carmen, Chichen Itza, Merida, Los Cabos, Mexico City and Puerto Vallarta.

My Family Loves Fajita Tacos

Growing up one of my families favourite dinners was chicken fajita tacos. In the 90s my mother joined Weight Watchers and they had a popular low fat and low carb recipe for chicken fajitas.

The healthy recipe was so quick and easy to prepare she often made chicken fajita tacos for us at the cottage in Muskoka after a long day spent swimming or lounging in the sun on the dock.

I’ve reworked my mothers recipe to suit my own tastes, adding a splash of tequila and a more spicy marinade. As kids we’d always treat fajita taco night as a DIY food party. We loved filling our own taco shells and topping them with sour cream, shredded cheese, salsa and guacamole.

Ingredients

Fajita Tacos

  • 1.75 lb Boneless Skinless Chicken Thighs sliced
  • 1 Green Bell Pepper sliced
  • 1 Red Bell Pepper sliced
  • 1 Yellow Bell Pepper sliced
  • 1 Vidalia Onion sliced
  • 1 cup Black Beans
  • 1 cup Sweet Corn
  • 2 tbsp Lime Juice
  • 1/4 cup Tequila
  • 4 tbsp Vegetable oil
  • 8 Flour Tortillas or Hard Shell Corn Tacos
  • 1/4 cup Cilantro chopped
  • 1 Avocado sliced
  • 1 cup Sour Cream
  • 1 cup Salsa

Fajita Taco Seasoning

  • 2 tbsp chili powder
  • 2 tsp salt
  • 2 tsp brown sugar
  • 2 tsp paprika
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 tsp onion powder

Instructions

  • In a medium-size bowl, combine chili powder, salt, pepper, brown sugar, paprika, cumin, garlic powder, oregano and onion powder for the fajita seasoning.
  • Slice bell peppers and onion and place in a zip top bag along with 2 tablespoons of oil and half of the fajita seasoning. Shake the bag to coat the peppers and onion evenly.
  • In a separate bag, place the chicken, 2 tablespoons of oil and the remaining fajita seasoning to coat the chicken. Place both bags in the refrigerator.
  • Warm a large wok or non-stick skillet over medium high heat. Fry sliced chicken thighs for 6-8 minutes, until golden brown. Remove and set aside.
  • Add sliced bell peppers, onions, black beans and corn and sauté for 5-6 minutes, until golden brown.
  • Return chicken to the wok and toss with vegetables, Tequila and lime juice, stirring over medium heat. Cook mixture for another 2-3 minutes.
  • Scoop chicken, pepper and onion fajita filling into soft flour tortillas or hard corn tacos. Top with sliced avocado and cilantro. Serve with sour cream and salsa.
