Fajita Tacos
- 1.75 lb Boneless Skinless Chicken Thighs sliced
- 1 Green Bell Pepper sliced
- 1 Red Bell Pepper sliced
- 1 Yellow Bell Pepper sliced
- 1 Vidalia Onion sliced
- 1 cup Black Beans
- 1 cup Sweet Corn
- 2 tbsp Lime Juice
- 1/4 cup Tequila
- 4 tbsp Vegetable oil
- 8 Flour Tortillas or Hard Shell Corn Tacos
- 1/4 cup Cilantro chopped
- 1 Avocado sliced
- 1 cup Sour Cream
- 1 cup Salsa
Fajita Taco Seasoning
- 2 tbsp chili powder
- 2 tsp salt
- 2 tsp brown sugar
- 2 tsp paprika
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp oregano
- 1 tsp onion powder
In a medium-size bowl, combine chili powder, salt, pepper, brown sugar, paprika, cumin, garlic powder, oregano and onion powder for the fajita seasoning.
Slice bell peppers and onion and place in a zip top bag along with 2 tablespoons of oil and half of the fajita seasoning. Shake the bag to coat the peppers and onion evenly.
In a separate bag, place the chicken, 2 tablespoons of oil and the remaining fajita seasoning to coat the chicken. Place both bags in the refrigerator.
Warm a large wok or non-stick skillet over medium high heat. Fry sliced chicken thighs for 6-8 minutes, until golden brown. Remove and set aside.
Add sliced bell peppers, onions, black beans and corn and sauté for 5-6 minutes, until golden brown.
Return chicken to the wok and toss with vegetables, Tequila and lime juice, stirring over medium heat. Cook mixture for another 2-3 minutes.
Scoop chicken, pepper and onion fajita filling into soft flour tortillas or hard corn tacos. Top with sliced avocado and cilantro. Serve with sour cream and salsa.
