We love serving our Rhubarb and Ginger Gin recipe on hot summer days after harvesting our rhubarb plan in the spring. The refreshing gin cocktail made with ginger rhubarb syrup is a crowd pleaser at family barbecues and cottage cocktail hour.

Rhubarb Ginger Simple Syrup

  • 2 cups Rhubarb chopped
  • 2 tbsp Ginger minced
  • 1 cup White Sugar
  • 1.5 cups Water

Rhubarb Ginger Gin Cocktail

  • 2 oz Gin
  • 2 oz Lime juice
  • 3 oz Rhubarb Simple Syrup
  • 5 oz Soda Water
  • 2 dashes Rhubarb Bitters
  • Lime Slice and Rhubarb Stalk Garnish

Instructions

Rhubarb Ginger Simple Syrup

  • In a saucepan, combine rhubarb, ginger, sugar, and water. Bring to a boil over medium-high heat, then reduce heat and simmer 20 minutes. Remove from heat and allow to cool completely. Strain syrup through a sieve and reserve liquid.

Rhubarb Ginger Gin Cocktail

  • Fill a cocktail shaker with ice and add gin, lime juice, rhubarb syrup and rhubarb bitters. Shake well for 30-45 minutes until well combined.
  • Strain into a chilled highball glass filled with ice. Top with soda water and stir with a cocktail spoon.
  • Garnish with lime slice and rhubarb stalk.
