My Family Loves This Easy Tomato Feta Soup

My family are big fans of Mediterranean cuisine.

We love cooking flavourful dishes from Greece, Bosnia, Croatia, Egypt, France, Israel, Italy, Lebanon, Malta, Morocco, Spain, and Turkey.

After traveling to Greece I wanted to share my love for feta and orzo with friends and family by making the comforting chunky tomato soup at home.

I prepared the recipe at our cottage on a hot summer day. At the local farmers market bright red tomatoes were in peak season and I had a voluptuous basil plant blooming on my balcony ready to be plucked.

We love this soup because the recipe includes just a handful of affordable ingredients you’ll likely already have in your cupboards and fridge.

  • Chicken Broth: adds a savoury umami-forward base to the soup. Chicken soup is one of the world’s most popular comfort foods and we’re here for it!
  • Tomatoes: only use fresh tomatoes not canned. You can use any variety from plum “roma” style tomatoes to beefsteak or cherry tomatoes.
  • Olive Oil: use a good quality extra virgin olive oil to add depth of flavour.
  • Orzo Pasta: this Italian pasta is the shape of a large piece of rice and is very popular in Mediterranean cuisine.
  • Feta: we like to use cow’s milk feta but you can also use sheep or goats milk cheese. We suggest chopping the feta into chunks with a knife so they look like little cubes or you can crumble the feta with your hands into the pot.
  • Fresh Basil: adds an herbaceousness to the soup and eye-catching green.

  1. To a large pot, add the water, broth, quartered tomatoes, oil, salt and pepper to taste. Bring to a boil and cook for 5 minutes on medium low heat. 
  2. Add the orzo pasta, stir, and cover the pot. Simmer for 20 to 25 minutes or until pasta is al dente. Stir occasionally. Turn off the heat, remove the pot from the stove and sprinkle in the feta cheese.
  3. Garnish with fresh basil and serve hot.

  • Use a large pot or Dutch Oven to prepare the soup over your stove.
  • We’ve used chicken stock in this recipe but you can make a vegetarian Tomato and Feta Soup by substituting with vegetable stock.
  • Only use fresh tomatoes in this recipe not the canned variety as you want the sweet and juicy flesh to shine. We like to use roma tomatoes but you can also chop up tiny cherry tomatoes or the large beefsteak variety.

  • We like to flavour this soup with fresh basil but you can substitue with parsley or dill if you prefer.

Leftovers & Storage

Leftovers taste amazing, and you can store them in the fridge for 3-5 days in an airtight container.

Reheat the soup gently on the stovetop or in a microwave, stirring carefully to avoid breaking up the feat as the chunks of cheese can fall apart easily. You can thin out the soup when reheating by adding a splash of chicken stock.

We don’t recommend freezing this soup as the feta and orzo can soften too much when thawing and develop a mushy consistency.
