- 4 cups Water
- 4 cups Chicken Broth
- 300 g Tomatoes quartered
- 2 tbsp Olive Oil
- Kosher Salt + Pepper to taste
- 1 cup Orzo Pasta
- 6 oz Feta Cheese sliced into small cubes
- 1/4 cup Fresh Basil finely chopped
To a large pot, add the water, broth, quartered tomatoes, oil, salt and pepper to taste. Bring to a boil and cook for 5 minutes on medium low heat.
Add the orzo pasta, stir, and cover the pot. Simmer for 20 to 25 minutes or until pasta is al dente. Stir occasionally. Turn off the heat, remove the pot from the stove and sprinkle in the feta cheese.
Garnish with fresh basil and serve hot.
