What Are Tostadas de Camaron?

Tostada is the name given to several dishes in Mexico and other parts of Latin America that include a toasted tortilla as the main base of their preparation.

The name usually refers to a flat or bowl-shaped tortilla that is deep-fried or toasted, but may also refer to any dish using a tostada as a base. 

Corn tortillas are usually used for tostadas, although tostadas made of wheat or other ingredients can also be found.

Just like stale bread can be made palatable as toast, a stale tortilla can be repurposed as a tostada by frying it in boiling oil until it becomes golden, rigid, and crunchy. Commercial tostadas are similar in taste and consistency to tortilla chips.

Our Tostadas de Camaron uses store bought corn tostada that is topped with a homemade prawn ceviche.

My Family Loves Prawn Tostada

I love cooking Mexican food for my friends and family.

After traveling through Mexico tasting the best regional tacos and tostadas I was keen to recreate my favourite dishes at home.

I first made this Tostadas de Camaron recipe for my family on a hot summer day at the cottage. Fresh shrimp was on sale at the grocery store and so were jalapeños and massive juicy limes.

I prepared the ceviche in the morning and let it cool in the fridge then assembled the tostadas for lunch. It was so hot that day I served the tostadas on the dock with a bowl of guacamole, spicy queso dip, Mezcal Paloma Slushies and Margaritas.

I knew my parents would love this recipe because they enjoy fresh seafood, spicy Mexican dishes and easy cutlery free meals.

Prawn Tostada Recipe Cooking Tips

Tostadas de Camaron is a quick and easy Mexican recipe to make at home. Here are some helpful tips and tricks to get you started.

  • You can use prawns or shrimp in this recipe. It’s ideal to purchase fresh when possible. You can thaw frozen prawns the day before and store in your fridge as an alternative.
  • We’ve used plum tomatoes in this recipe but you can substitue with large beefsteak tomatoes or cherry tomatoes of a similar weight.
  • If you like spicy food keep the seeds in the jalapeño pepper. If you can’t handle the heat scrape out the seeds and discard.
  • You can purchase corn tostadas at a Latin American supermarket, the Mexican aisle of your grocery store or online.
  • We’ve used crumbled feta cheese in this recipe but you can also use Mexican queso.

Tostadas de Camaron Prawn Tostada

How to make Mexican Tostadas de Camaron. This easy homemade Prawn Ceviche Tostada recipe is garnished with queso, avocado and lime.

Ingredients

  • 1 lb Fresh Shrimp peeled, deveined, halved lengthwise
  • 3/4 cup Lime Juice
  • 1.5 lb Roma Plum Tomatoes diced
  • 1/2 English Cucumber peeled and diced
  • 1/4 cup Red Onion sliced
  • 1/4 cup Cilantro chopped
  • 1 Jalapeno Pepper sliced into rings

Seasoning

  • 1 Limes juiced
  • 3/4 tsp Kosher Salt
  • 1/4 tsp Black Pepper
  • 1/4 tsp Garlic Powder

Assembly

  • 6 Tostadas
  • 1 Avocado sliced
  • 1/2 cup Crumbled Queso or Feta Cheese

Instructions

  • Set up a large bowl of ice and water. In a medium saucepan, bring water to boil over high heat. Add 0.5 pounds of the shrimp and cook until they turn pink, 3-4 minutes. Use a slotted spoon to transfer the shrimp to the ice bath to stop them from cooking.
  • In a medium bowl, combine the remaining shrimp and lime juice, making sure all of the shrimp are submerged. Cover the bowl with plastic wrap and place in the fridge. Let the shrimp marinate in the lime juice until they are pink in colour, 15-20 minutes. Drain the shrimp.
  • In a large bowl, toss together the tomatoes, cucumber, red onion, cilantro, and sliced Jalapeno. Fold in the lime-marinated shrimp and the parboiled shrimp.
  • In a small bowl, whisk together the lime juice, kosher salt, garlic salt and black pepper. Pour the seasoning over the ceviche and toss to combine.
  • Top each tostada with 1 cup of the ceviche. Top the ceviche with slices of avocado and crumbled cheese. Serve with lime wedges and hot sauce.
