Cinnamon French Toast Made With Brioche Is Heaven
One of my fondest memories growing up as a kid was waking up in the morning at our family cottage in Muskoka and smelling French Toast sizzling in the kitchen.
My father’s favourite brunch dish is French Toast, which he traditionally prepared for breakfast on our birthdays. He’d whisk a few eggs together with milk, festive spices and then dredge thick sliced of Italian loaf. He’d fry each side of the egg-soaked bread in butter and then top with sliced berries, banana and Canadian maple syrup.
I’ve published several French Toast recipes with slight variations: Buttermilk French Toast, Sourdough French Toast, and decadent Baileys French Toast.
In this mouth-watering brunch experiment I wanted to use thick slices of fluffy and buttery brioche bread with a homemade custard flavoured with ground cinnamon. The perfect pairing with a frothy cappuccino in the morning.

Why You’ll Love Cinnamon Brioche French Toast
- Uses rich, bakery-style brioche for a soft, custardy interior
- Simple ingredients you likely already have at home
- Naturally sweet and aromatic thanks to vanilla and cinnamon
- Perfect for toppings like syrup, whipped cream, or berries
- Ready in under 20 minutes

How To Make Brioche French Toast
Follow these simple steps for golden, restaurant-quality Cinnamon French Toast at home:
- Make The Egg Dip: In a shallow bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until smooth.
- Dip The Brioche: Dip each brioche slice into the custard, allowing it to soak for a few seconds per side. Brioche absorbs liquid quickly, so avoid soaking for too long.
- Cook Until Golden: In a skillet over medium heat, melt butter. Cook the soaked slices for 2–3 minutes per side until deep golden brown and crisp at the edges.
- Garnish and Serve: Drizzle with warm maple syrup, add fresh berries, or layer on whipped cream for extra indulgence.

Tips for Perfect Brioche French Toast
- Use slightly stale brioche: it holds the custard better.
- Cook on medium heat: to avoid burning the butter.
- Whisk well: so the cinnamon incorporates evenly.
- Use thick slices: (¾–1 inch) for the best texture.
- If serving a crowd, have a baking sheet or cooling rack resting in your oven at 200 F to keep warm before serving.

Topping Ideas
While maple syrup and berries are classics, try these other variations:
- Caramelized bananas
- Honey and toasted pecans
- Nutella and strawberries
- Lemon curd
- Vanilla whipped cream
- A drizzle of Baileys
