What Is Chokladsnittar?

Chokladsnittar (Swedish Chocolate Cookie Slices) are rich and buttery chocolate cookies where the dough is shaped into logs, baked and sliced into the size of biscotti. The classic Scandinavian cookie can be found in cafes, bakeries and homes from Stockholm to Malmo!

They’re traditionally served topped with crunchy white pearl sugar, which makes them look like logs dusted with fresh snow. Which is why Chokladsnittar is one of our favourite desserts to bake during the Christmas holidays.

These addictive yet simple cookies are buttery, crisp and perfect with a cup of coffee at Swedish fika.

What Is Swedish Fika?

Fika is often translated as “a coffee and cake break”, which is mostly correct, but locals in Sweden will attest it is much more than that.

The word fika actually derives from the 19th-century slang word for coffee: kaffi. Invert the word kaffi, and you get fika!

Fika is a concept, state of mind, attitude and important part of Swedish culinary culture. Many Swedes consider that it is almost essential to make time for fika every day. It means making time for friends, family and colleagues to share a cup of coffee (or tea) and a petite Swedish pastry, like Chokladsnittar.

Fika cannot be experienced at your desk at work or at home by yourself. Swedish Fika is a communal ritual. Swedish children are taught that it is important to make time to stop and socialize during the day.

Locals believe taking a pause to refresh your brain and strengthen you relationships is important. It also makes business sense: Swedish firms have found teams work better and are more productive when fika is institutionalized.

Fika can also be used as a verb in everyday conversation. Swedes will often say to each other, “Let’s go and fika!” or “You and I fika together well”.

While not exactly the same, we often liken Swedish Fika to Britain’s tradition for relaxing mid-day over an elegant High Tea.

Travel To Sweden by Making Chokladsnittar at Home

I love traveling to Europe!

My fondest food memory of Sweden is the country’s enthusiasm for cakes, pies and cookies! I was in Goteborg on Midsommar, instantly falling in love with Jordgubbstårta, Smörgåstårta and traditional Swedish Chocolate Cookie Slices thanks to all the local bakeries selling thick slices.

There’s nothing more delightful than sipping a frothy cappuccino at a Swedish cafe while nibbling a plate of crispy Chocolate Slices.

My Family Loves Swedish Chocolate Cookie Slices

After encountering Chokladsnittar on a visit to Sweden I thought I should introduce the simple chocolate cookie to my family.

I knew my parents would love this pastry because they enjoy rich chocolate desserts, pastries that pair nicely with coffee and festive Christmas cookies.

I prepared the chocolate cookie slices with my mom a few days before Christmas, using a pizza cutter to slice the hot dough right out of the oven. The pearl sugar on top appears like snow, making it an eye-catching Christmas cookie to place on a holiday dessert table.

While we enjoy snacking on Chocolate Cookie Slices simply dunked in coffee, they taste great when paired with a bowl of ice cream.

Chokladsnittar Ingredients

  • 100 g Softened Butter
  • 1 Egg
  • 80 g White Sugar
  • 1 tsp Vanilla Extract
  • 1 tsp Corn Syrup
  • 150 g All Purpose Flour
  • 4 tsp Cocoa Powder
  • 1 tsp Baking Powder
  • Pearl Sugar + Egg Wash

Directions

  1. Preheat oven to 350 F.
  2. In a mixing bowl, cream together the butter, egg, white sugar, corn syrup and vanilla.
  3. In a separate bowl, sift the dry ingredients together, then mix into the wet mixture. Bring the mixture together with your hands to form an even dough.
  4. Split the dough into two portions, roll out each lump into a 2 x 14 inch rectangle directly onto prepared baking sheets.
  5. Flatten the lengths and brush with beaten egg. Sprinkle on pearl sugar.
  6. Bake in the preheated oven for 10 minutes until almost baked through.
  7. As soon as you remove from the oven use a pizza wheel or sharp knife to cut each piece into 12 even strips.
  8. Leave to cool on a wire rack and store in an airtight container.

  • Be sure to use Dutch process cocoa for best colour and flavour. Dutch process cocoa gives desserts a rich and dark colour, which makes these cookies eye-catching.
  • Don’t over mix the dough to ensure the cookie slices are tender and not tough.
  • Do not overdo the egg wash. You want to brush just enough so that the pearl sugar adheres to the surface of the dough while baking.
  • Use a pizza cutter to easily slice the the cookie logs right out of the oven. Once at room temperature they will firm up into crunchy chocolate slices. If you don’t have a pizza cutter use a sharp French knife.
