- 100 g Softened Butter
- 1 Egg
- 80 g White Sugar
- 1 tsp Vanilla Extract
- 1 tsp Corn Syrup
- 150 g All Purpose Flour
- 4 tsp Dutch Process Cocoa Powder
- 1 tsp Baking Powder
- Pearl Sugar + Egg Wash garnish
Preheat oven to 350 F.
In a mixing bowl, cream together the butter, egg, white sugar, corn syrup and vanilla.
In a separate bowl, sift the dry ingredients together, then mix into the wet mixture. Bring the mixture together with your hands to form an even dough.
Split the dough into two portions, roll out each lump into a 2 x 14 inch rectangle directly onto prepared baking sheets.
Flatten the lengths and brush with beaten egg. Sprinkle on pearl sugar.
Bake in the preheated oven for 10 minutes until almost baked through.
As soon as you remove from the oven use a pizza wheel or sharp knife to cut each piece into 12 even strips.
Leave to cool on a wire rack and store in an airtight container.
