Pineapple Mojito Cocktail Ingredients
This homemade Pineapple Mojito cocktail is made with fresh and healthy ingredients.
- Rum: we suggest using Bacardi, Diplomatico or Mount Gay Rum.
- Pineapple: we suggest purchasing a ripe pineapple from the grocery store and blitzing the fruit chunks in your blender until liquified. Then pass the juice through a sieve or strainer to produce your very own DIY pineapple juice. You can also purchase Pineapple Juice.
- Lime Juice: only use freshly squeezed lime juice. You can taste the difference when someone incorrectly muddles cocktails with store bought citrus juice.
- Simple Syrup: we always have homemade simple syrup in our fridge but you can also use Organic Ginger Syrup by The Ginger People.
- Soda Water: we suggest using Fever Tree Club Soda. You could also use sparkling water from your own Soda Stream machine.
- Mint: you can purchase mint or harvest your own in an indoor edible garden.
Pineapple Mojito Tips
This Pineapple Mojito recipe is easy to make at home, ready to serve in under 10 minutes.
We love serving our Pineapple Mojito on hot days in the summer at family barbecues, cottage happy hour and on a sun-soaked patio.
When preparing a traditional mojito, fresh lime juice is added to sugar (or to simple syrup) and mint leaves. The mixture is then gently mashed with a muddler. The mint leaves should only be bruised to release the essential oils and should not be shredded or sliced. Then rum (which we are substituting for vodka) is added and the mixture is briefly stirred to dissolve the sugar and to lift the mint leaves up from the bottom for better presentation. Finally, the drink is topped with ice and soda water. Mint leaves and lime wedges are used to garnish the glass.
Our Pineapple Mojito recipe below is listed for one person. If you’re hosting a large gathering feel free to multiply the ingredients by the number of guests and muddle the drink in a punch bowl or jug rather than a cocktail shaker.
Serve the drink in a highball or collins glass with whole ice cubes or crushed ice.

Best Pineapple Mojito Recipe
Pineapple Mojito Cocktail
- Shot Glass

- 8 Fresh Mint Leaves
- 2 tbsp Simple Syrup
- 1 oz Lime Juice
- 1/2 cup Dark Rum
- 1 cup Pineapple Juice
- 1/2 cup Soda Water
- Pineapple Wedge and Mint Sprig garnish
- Muddle mint leaves with simple syrup and lime juice in a cocktail shaker.
- Add rum and pineapple juice. Cover and shake vigorously 20-30 seconds.
- Strain into 2 collins glasses filled with ice and top each glass with 1/4 cup club soda.
- Garnish with pineapple wedge and fresh mint sprig.
