Ingredients

  • 2 Romaine Hearts thinly sliced
  • 0.5 English Cucumber chopped
  • 4 Scallions thinly sliced
  • 1/4 cup Fresh Dill finely chopped
  • 1 tbsp Fresh Parsley finely chopped
  • 1 tbsp Fresh Mint finely chopped

Dressing

  • 1/2 cup Olive Oil
  • 2 tbsp Red Wine Vinegar
  • 2 tbsp Lemon Juice
  • Pinch Kosher Salt
  • 1 tsp Fresh Oregano chopped
  • 1/2 cup Feta Cheese crumbled
  • 1/4 cup Kalamata Olives sliced

Instructions

  • Combine all of the dressing ingredients in a bowl and whisk together until emulsified. Set aside.
  • Combine all of the remaining salad ingredients together in a large bowl and top with the dressing. Toss together to coat.
  • Sprinkle with feta cheese and olives then serve.
