Pho Vistro is located close to the Four Seasons Centre for the Performing Arts. The affordable pho restaurant is a great option for those looking for a pre or post theatre meal.

The restaurant is owned by three first-time restauranteurs. Dat Nguyen, Quang Nguyen and Dr. Hoanh Nguyen launched the Vietnamese restaurant as a clean-eating concept.

The 34-seat dining room was designed by Fraser Designs. Step inside Pho Vistro on Queen Street West and and you’ll find a cozy space featuring warm wood, high-top tables, exposed brick and vintage bulbs. If you’ve traveled to Vietnam you’re certain to enjoy the photos that adorn the wall from Hanoi, Saigon, Hoi An, Halong Bay, Hue, Nha Trang, and the Mekong Delta.

There really is nothing more therapeutic than slowly slurping through a bowl of Vietnamese beef bone broth on a frigid Friday. As the steaming bowl arrives under my nose I take in every aroma as whispers of steam curl towards the ceiling. I cup my shivering hands around the base of the bowl in an attempt to warm up. That feeling of spoon-fed nourishment can instantly turn a winter woe frown upside down.

The kitchen’s signature Vietnamese soup broth is prepared by slow cooking beef ones for 36 hours. The restaurants Vietnamese chefs balance the broth by adding herbs and spices such as fennel, cinnamon, cardamom, ginger and cilantro. If you’re not a fan of beef, chicken and vegan broths are also available.

Slice up a spicy chili, stir your noodles with aromatic basil and spritz a sweet lime before shovelling succulent rice noodles into your smug mug.  If one massive bowl of pho is not enough to fill you up there are plenty of appetizers worth sampling. And since sharing is caring be sure to order shrimp filled Imperial Rolls, sweet Chicken Wings (tossed in lemongrass and maple syrup) and crunchy fried Spring Rolls.
