Culinary mastermind Jose Andres brings the authentic flavour of Spanish tapas and paellas to Las Vegas with DC’s award-winning restaurant Jaleo re-imagined to include the excitement and spectacle of the Vegas Strip. Housed within The Cosmopolitan of Las Vegas, Jaleo is ideally located just south of the Bellagio fountains.
The restaurants centrepiece is its Paella Grill, an open-fire wood grill specially designed to cook paellas in the authentic Spanish way. The open concept dinning room also includes a cocktail and tapas bar, where guests can enjoy Jose’s interpretation of classic Spanish dishes while sipping through a jug of sangria.

The kitchen brigade does an excellent job at showcasing the authentic flavours and textures of Spain which I dare say are best enjoyed while sipping through a ripe Rioja or sweet Sherry. My fondest memories of the meal include fatty Jamon Iberico, edible art “Patatas Bravas,” juicy house-made chorizo and perfectly creamy Spanish Flan paired with the subtle sweet of orange.
