How To Make Japanese Miso Banana Bread
If you love banana bread but want to try something new, this Japanese Miso Banana Bread is about to become your favourite baking experiment. By adding a spoonful of miso paste to the batter, you transform the everyday banana loaf into a rich, savoury-sweet treat with irresistible depth of flavour.
The beauty of this recipe lies in its balance. Overripe bananas bring their natural sweetness and moisture, while white miso contributes a subtle saltiness and umami that enhances every bite. The result is a loaf that’s soft, tender, and far more complex than the average banana bread. It’s the perfect way to elevate a comfort food classic into something a little gourmet.
Serve it warm with a smear of salted butter for an indulgent snack, or slice it and toast lightly for breakfast with a drizzle of honey. The miso works quietly in the background, keeping the loaf from tipping into cloying sweetness and instead delivering a beautifully rounded flavour profile.
For a bit of flair, you can sprinkle sesame seeds or crushed walnuts on top before baking. They’ll add a nutty crunch and make the loaf look bakery-worthy. Pair it with green tea or your morning latte, and you’ll see why this Japanese twist has become a cult favourite among adventurous bakers.
This Miso Banana Bread is comfort food with a twist, familiar enough to satisfy, yet surprising enough to spark conversation around the table. It’s an easy bake that shows just how magical a single, unexpected ingredient can be.

- 1 3/4 cup All Purpose Flour
- 1 tsp Baking Soda
- 1/2 tsp Baking Powder
- 1/2 tsp Kosher Salt
- 1/2 cup Unsalted Butter
- 1 cup Brown Sugar
- 1/4 cup White Miso
- 1/4 cup Greek Yogurt

- 2 Large Eggs
- 1 tsp Sesame Seeds
Instructions
- Preheat your oven to 350°. Butter and flour a 10-by-5-inch loaf pan.

At low speed, slowly add the yogurt and milk, then beat in the eggs 1 at a time until incorporated. Beat in the mashed bananas. Add the dry ingredients and mix until just blended. Scrape into the prepared pan.
- Slice the remaining banana lengthwise and arrange the halves on top of the batter side by side, cut side up. Sprinkle with sesame seeds.
- Bake for 90 minutes, or until a toothpick inserted in the centre comes out clean. Let the bread cool on a rack for 30 minutes before turning out to cool completely.
