Inspired by celebrity chef Jean-Georges Vongerichten’s concept of the “hotel as home” Market Kitchen extends to the restaurant as a casual family kitchen. I had the opportunity to dine at Jean-Georges similarly titled Market Kitchen at the Shangri-la Hotel Vancouver a few years ago so was looking forward to see how the culinary experience translated from Canada’s West Coast to high atop the Colombian Andes.
Market Kitchen features a farm-to-table menu inspired by world-class dishes from culinary mastermind Jean-Georges Vongerichten which utilizes Colombia’s agricultural bounty. Chef Emiliano Rabía Sottil mans the kitchen after enjoying work stints in Chicago, Mexico City and Barcelona. Highlights from the Market Kitchen menu include succulent Bacon Wrapped Jump Shrimp, perfectly scorched Beef Carpaccio Pizza, radish and fennel adorned Pork Milanese and Jean-Georges signature sweet treat Salted Caramel Ice Cream Sundae.
