For depth of flavour, it’s best to bake with a mix of tart and sweet apples, which is why we suggest using tart granny smith and sweet gala in our recipe. Other tart apples you can use include Braeburn, Jonathan, or Pacific Rose. Other sweet apples you can use are Jazz, Honeycrisp, Pink Lady, or Fuji.

Can I freeze cobbler to enjoy later?

You can, but it’s much better fresh out of the oven. The apple filling tends to dry out after freezing and thawing, and the cake topping can be slightly wet. You can freeze a baked and cooled cobbler for up to 3 months. Thaw in the refrigerator when ready to enjoy and reheat by warming in your oven or air fryer to help crisp up the topping before serving. Do not freeze an uncooked cobbler! The cake-topping needs to bake and set before freezing as buttermilk activates the baking powder when mixed together.

Can I use pears instead of apples, or a mix of both?

Yes just be sure to use the same amount of sliced fruit. Since pears are sweet we’d recommend using a tart pear like granny smith to balance the flavours.

  • 8 cups Peeled Sliced Granny Smith Apples 1/4 inch slice

  • 3 tbsp Packed Brown Sugar
  • 1 tbsp Lemon Juice
  • 1 tbsp All Purpose Flour
  • 1.5 tsp Ground Cinnamon

  • 6 tbsp Unsalted Butter melted
  • 1 cup White Sugar
  • 1 cup Buttermilk
  • 2 tsp Vanilla Extract
  • 1 3/4 cups All Purpose Flour
  • 2 tsp Baking Powder
  • 1/2 tsp Kosher Salt
  • 1/2 tsp Ground Cinnamon

Instructions

  • Preheat oven to 350°F. Lightly grease a 9×13-inch baking pan.
  • Melt 2 Tablespoons of butter in a medium saucepan over medium heat. Add the apple slices, brown sugar, lemon juice, flour, and spices. Cook, stirring, for 5 minutes, or until the apples are coated and begin to soften. Transfer apple filling to the prepared baking pan.
  • Whisk the melted butter and sugar together in a medium bowl. Add the buttermilk, vanilla, flour, baking powder, and salt, and whisk until combined and mostly smooth. Pour and spread the batter over the apples. Sprinkle cinnamon evenly over the top.
  • Bake on the centre rack for 50-55 minutes or until the topping is golden and the apple filling is bubbling around the edges. Remove from the oven, place on a cooling rack, and allow to cool for at least 5 minutes before serving.
  • Serve warm, room temperature, or cold, on its own or topped with vanilla ice cream or caramel sauce.
