Thai Red Curry Prawn Burger

- 2 Scallions finely sliced
- 1 cup Cilantro chopped
- 2 tsp Lime Leaf finely chopped
- 250 g Raw Prawns
- 1 tbsp Thai Red Curry Paste
- Kosher Salt
- 2 tbsp Olive Oil
- 7 tbsp Mayonnaise
- 1 Lime zest and juice
- 1/2 tsp Fresh Ginger minced
- 2 Brioche Buns
- 100 g Rocket
- 1/4 cup Red Onion sliced
Place the scallions, cilantro and lime leaf on a cutting board. Add the raw prawns and roughly chop the prawns with the herb mix until you achieve a fine paste. Transfer to a mixing bowl and add Thai red chili paste and season with salt. Use a spatula or wooden spoon to combine then cover and chill in the fridge for at least 30 minutes.
Divide the chilled mixture in two. Cover your hands in olive oil and shape into two burger patties.
Heat a tablespoon of oil in a large nonstick skillet over medium high heat. Add the burgers and cook for 2-3 minutes on each side.
In a small bowl, mix the mayo with lime zest, juice and minced ginger.
Remove the patties from the heat. Slice the buns in half and toast until golden brown.
Cover the top side of the brioche bun with dollop of mayo. Place red onion slices on the bottom bun then top with prawn patty and sprinkle with a handful of rocket.
