Thai Red Curry Prawn Burger

Ingredients

  • 2 Scallions finely sliced
  • 1 cup Cilantro chopped
  • 2 tsp Lime Leaf finely chopped
  • 250 g Raw Prawns
  • 1 tbsp Thai Red Curry Paste
  • Kosher Salt
  • 2 tbsp Olive Oil
  • 7 tbsp Mayonnaise
  • 1 Lime zest and juice
  • 1/2 tsp Fresh Ginger minced
  • 2 Brioche Buns
  • 100 g Rocket
  • 1/4 cup Red Onion sliced

Instructions

  • Place the scallions, cilantro and lime leaf on a cutting board. Add the raw prawns and roughly chop the prawns with the herb mix until you achieve a fine paste. Transfer to a mixing bowl and add Thai red chili paste and season with salt. Use a spatula or wooden spoon to combine then cover and chill in the fridge for at least 30 minutes.
  • Divide the chilled mixture in two. Cover your hands in olive oil and shape into two burger patties.
  • Heat a tablespoon of oil in a large nonstick skillet over medium high heat. Add the burgers and cook for 2-3 minutes on each side.
  • In a small bowl, mix the mayo with lime zest, juice and minced ginger.
  • Remove the patties from the heat. Slice the buns in half and toast until golden brown.
  • Cover the top side of the brioche bun with dollop of mayo. Place red onion slices on the bottom bun then top with prawn patty and sprinkle with a handful of rocket.
