- 2 Large Sweet Potatoes skin on, cut into large chunks
- 1 tbsp Canola Oil
- 1.5 tsp Chaat Masala
- 1/4 tsp Red Chili Powder
- 1/2 tsp Kosher Salt
- 2 tbsp Lemon or Lime Juice
- 2 tbsp Cilantro
- 1 tbsp Finely Chopped Red Onion
- 1 tbsp Fried Spiced Peanuts garnish
- 1 tbsp Puffed Rice
- 1 tsp Cilantro Chutney
- 1 tsp Tamarind Chutney
Preheat oven to 400 F.
Toss sweet potato chunks with oil in a mixing bowl. Scatter sweet potato pieces on a baking sheet then slide into the middle rack of the oven. Bake for 35-40 minutes, or until tender on the inside and crispy on the outside. Be sure to slip half way through roasting.
Place roasted sweet potato chunks in a mixing bowl and sprinkle with chaat masala, red chili powder, salt, and squeeze of lemon or lime juice.
Divide sweet potatoes into 4 bowls. Garnish with cilantro, red onion, spiced fried peanuts, puffed rice and drizzle with chutneys.
