Ingredients

Peach Cobbler Muffins

  • 2 cups All purpose flour
  • 1/3 cup White sugar
  • 1/3 cup Brown sugar
  • 2 tsp Baking soda
  • 1/2 tsp Ground cinnamon
  • 1/2 tsp Ground nutmeg
  • 1/2 tsp Salt
  • 1 cup Yogurt
  • 1/2 cup Vegetable oil
  • 2 Eggs
  • 1 1/2 tsp Vanilla extract
  • 1/2 tsp Almond extract
  • 1 1/2 cups Peaches peeled and diced

Topping

  • 1/2 cup Peach jam
  • 1/4 cup Brown sugar
  • 1/4 cup Pecans chopped
  • 3 tbsp Rolled oats
  • 1/2 tsp Cinnamon
  • 1 tbsp Butter melted

Instructions

  • Preheat oven to 375 F and grease a 12-cup muffin tin.
  • Whisk flour, sugars, baking powder, baking soda, spices and salt together in large bowl.
  • Whisk yogurt, oil, eggs, and extracts together in separate bowl until smooth. Stir wet mixture into dry ingredients until combined, then fold in chopped peaches.
  • Sprinkle muffins with oatmeal and pecan topping and dollop of peach jam.
  • Bake for 20-25 minutes. Let muffins cool for 10 minutes before serving.
