Indonesian Yellow Rice Nasi Kuning

Ingredients

  • 2 cups Long Grain Rice like Jasmine or Basmati
  • 2 cups Water
  • 1/2 cup Coconut Milk
  • 1 tbsp Turmeric Powder
  • 1 Lemongrass Stalk bruised
  • 2 Bay Leaves
  • 2 Lime Leaves
  • 1/2 tsp Kosher Salt

Instructions

  • Wash the rice in cold water until it runs clear.
  • Bring water and coconut milk to a boil in a large skillet and then add rice and the rest of the ingredients. Stir to mix.
  • Lower the heat to simmer. Cover with a lid and let cook for around 20 minutes. Turn off the heat but do not remove the lid yet. Let it rest for 10 minutes.
  • Uncover the lid and discard the lemongrass, bay leaf and lime leaf.
  • Fluff the rice with a fork. Serve hot.
