- 2 cups Long Grain Rice like Jasmine or Basmati
- 2 cups Water
- 1/2 cup Coconut Milk
- 1 tbsp Turmeric Powder
- 1 Lemongrass Stalk bruised
- 2 Bay Leaves
- 2 Lime Leaves
- 1/2 tsp Kosher Salt
Wash the rice in cold water until it runs clear.
Bring water and coconut milk to a boil in a large skillet and then add rice and the rest of the ingredients. Stir to mix.
Lower the heat to simmer. Cover with a lid and let cook for around 20 minutes. Turn off the heat but do not remove the lid yet. Let it rest for 10 minutes.
Uncover the lid and discard the lemongrass, bay leaf and lime leaf.
Fluff the rice with a fork. Serve hot.
