Gaspacho Moreliano Mexican Tropical Fruit Salad

Ingredients

  • 6 tbsp Olive Oil
  • 1/4 cup Lime Juice
  • 1 tsp Orange Zest
  • 2 tbsp Orange Juice
  • 1 Garlic Clove
  • 1 Jalapeno Pepper
  • 1 tsp Kosher Salt
  • 2 Mangos finely chopped
  • 10 oz Pineapple finely chopped
  • 8 oz Jicama finely chopped
  • 3 oz White Onion finely chopped
  • 1/2 cup Fresh Mint Leaves
  • 1/4 cup Crumbed Queso or Feta Cheese
  • 1/4 tsp Chile Powder

Instructions

  • In a measuring cup, whisk together the oil, lime juice, orange zest, orange juice, garlic, jalapeno and salt until dissolved.
  • In a large mixing bowl, toss the mango, pineapple, jicama, onion, mint and half the dressing. Let sit for 5 minutes.
  • Serve with additional dressing and top with a sprinkling of crumbled cheese and a few dashes of chili powder.
