Large Mixing Bowl
- 6 tbsp Olive Oil
- 1/4 cup Lime Juice
- 1 tsp Orange Zest
- 2 tbsp Orange Juice
- 1 Garlic Clove
- 1 Jalapeno Pepper
- 1 tsp Kosher Salt
- 2 Mangos finely chopped
- 10 oz Pineapple finely chopped
- 8 oz Jicama finely chopped
- 3 oz White Onion finely chopped
- 1/2 cup Fresh Mint Leaves
- 1/4 cup Crumbed Queso or Feta Cheese
- 1/4 tsp Chile Powder
In a measuring cup, whisk together the oil, lime juice, orange zest, orange juice, garlic, jalapeno and salt until dissolved.
In a large mixing bowl, toss the mango, pineapple, jicama, onion, mint and half the dressing. Let sit for 5 minutes.
Serve with additional dressing and top with a sprinkling of crumbled cheese and a few dashes of chili powder.
