Ingredients

  • 1/3 cup Mayonnaise
  • 1/4 cup Greek Yogurt
  • 2 tbsp Lime or Lemon Juice
  • 2 tsp Curry Powder
  • 1/2 tsp Kosher Salt
  • 1/4 tsp Black Pepper
  • 3 cups Cooked Chicken chopped or shredded
  • 1/2 cup Apple diced
  • 1/2 cup Celery diced
  • 1/2 cup Raisins
  • 1/4 cup Scallions chopped
  • 1/2 cup Cashews chopped

Instructions

  • In a large bowl, stir together mayonnaise, lime juice, curry powder, salt, and pepper. Add chicken, apple, celery, raisins, and scallions. Stir together until well coated. Cover and chill until ready to serve.
  • Stir in cashews and additional salt to taste just before serving.
