- 10 Lemons
- 750 ml Everclear Alcohol
- 3.5 cups Distilled Water
- 2.5 cups White Sugar
Wash 10 lemons to ensure the exterior is clean.
Using a vegetable peeler, remove the rinds of the lemons, reserving the fruit for other use. Remove the pith.
Combine lemon zest and bottle of Everclear in a large, sealable container, at least 2 qts.
Let steep for at least 4 days and up to 4 weeks in a cool, dry place.
Once the lemon-Everclear mixture is infused to your liking, combine sugar and water in a medium saucepan.
Bring to a boil, stirring regularly until sugar is fully dissolved, approximately 5-7 minutes. Let syrup cool to room temperature and combine simple syrup and lemon infusion to taste.
Strain mixture through a sieve. Chill limoncello in the fridge. Enjoy!
