Prasorizo Greek Leek Rice

- 1/2 cup Olive Oil
- 3 Leeks green parts removed, chopped
- 6 Garlic Cloves minced
- 1.5 cups Long Grain Rice
- 3 cups Water
- 2 tbsp Dill chopped
- 2 Lemons zest + juice
- Salt & Pepper
- 2 tbsp Feta crumbled
In a large, wide pot, heat the olive oil over low heat. Add the leeks and cook until wilted, 8 to 10 minutes. Add the garlic and stir to coat in the olive oil. Season with salt and pepper.
Add the rice and stir to coat. Stir in the water. Reduce the heat to simmer, cover and cook until the liquid is absorbed and the rice is very tender, about 20 minutes.
Towards the last 5 minutes of simmering, add the dill, lemon juice, and zest.
Serve topped with crumbled feta cheese and dill.
