Spanish Soup
- 1/3 cup Olive oil
- 15 Garlic cloves sliced
- 3 oz Spanish ham (cured) cut into 1/4 inch cubes
- 1/2 tsp Kosher salt
- 3 tsp Smoked paprika
- 3 tbsp Dry Sherry
- 6 cups Chicken stock
- 3 Large eggs beaten
Spanish Croutons
- 1.5 cups Bread sliced into cubes
- 3 tbsp Olive oil
- 1 tsp Smoked paprika
- 1/2 tsp Onion powder
- 1/2 tsp Kosher salt
Spanish Garlic Soup
In a large pot or dutch oven over medium heat, add olive oil and garlic. Slowly simmer garlic until fragrant - but not yet browned - approximately 3 minutes.
Add the cubed cured ham, sautéing them for a few minutes on medium heat.
Add salt and dry sherry and continue cooking for an additional 2 minutes.
Add smoked paprika and chicken stock. Bring to a boil, reduce heat, and simmer for 10 minutes. In a small bowl whisk eggs then slowly drizzle them into the soup and cook for 2 minutes.
Serve Spanish Soup immediately topped with croutons.
