Easy Spanish Garlic Soup

Ingredients

Spanish Soup

  • 1/3 cup Olive oil
  • 15 Garlic cloves sliced
  • 3 oz Spanish ham (cured) cut into 1/4 inch cubes
  • 1/2 tsp Kosher salt
  • 3 tsp Smoked paprika
  • 3 tbsp Dry Sherry
  • 6 cups Chicken stock
  • 3 Large eggs beaten

Spanish Croutons

  • 1.5 cups Bread sliced into cubes
  • 3 tbsp Olive oil
  • 1 tsp Smoked paprika
  • 1/2 tsp Onion powder
  • 1/2 tsp Kosher salt

Instructions

Homemade Croutons

  • Preheat oven to 350F.
  • Toss bread cubes with olive oil, paprika, onion powder and salt. Spread out in single layer on a baking sheet.
  • Bake for 15 minutes or until golden brown. Allow to cool and set aside.

Spanish Garlic Soup

  • In a large pot or dutch oven over medium heat, add olive oil and garlic. Slowly simmer garlic until fragrant - but not yet browned - approximately 3 minutes.
  • Add the cubed cured ham, sautéing them for a few minutes on medium heat.
  • Add salt and dry sherry and continue cooking for an additional 2 minutes.
  • Add smoked paprika and chicken stock. Bring to a boil, reduce heat, and simmer for 10 minutes.
  • In a small bowl whisk eggs then slowly drizzle them into the soup and cook for 2 minutes.
  • Serve Spanish Soup immediately topped with croutons.
