Ingredients

  • 4 Eggs
  • 2 cups White sugar
  • 3/4 cups Canola oil
  • 1 2/3 cups Pumpkin puree
  • 3/4 cups Greek yogurt
  • 3.5 cups All Purpose Flour
  • 1 tbsp Ground Cinnamon
  • 2 tsp Baking powder
  • 2 tsp Baking soda
  • 1 tsp Salt
  • 2 cups Banana cut into small dice
  • 1 cup Pecans chopped
  • 1/4 cup Rolled oats

Instructions

  • Beat eggs in a large mixing bowl. Add sugar, oil, pumpkin and yogurt and beat thoroughly.
  • Add dry ingredients and gently stir until well combined.
  • Stir in diced ripe banana.
  • Fill greased muffin tins with batter and sprinkle with chopped pecans and rolled oats.
  • Bake at 375F for 15-20 minutes.
