Ingredients

Green Onion Cake Dough

  • 300 grams All Purpose Flour
  • 170 grams Hot Water

Oil Mixture

  • 1/3 cup Vegetable oil
  • 1/4 cup All Purpose Flour
  • 6 Scallion whites

Additional Ingredients

  • 2 cups Green Onion or Chives finely chopped
  • Salt garnish
  • Sesame seeds garnish
  • Vegetable oil for brushing and pan-frying

Green Onion Cake Dipping Sauce

  • 1 tbsp Soy sauce
  • 1 tsp Chinese black vinegar
  • 1 tbsp Water
  • 1 clove Garlic minced
  • 1 tbsp Green Onion chopped

Instructions

  • Stir the hot water into the flour in a large bowl. Wait until it has cooled and knead until it forms a smooth dough.
  • Cover with plastic wrapper or a wet cloth and rest for at least 30 minutes. The gluten will relax, making it easier to roll out.
  • Heat oil over medium heat and fry green onions whites until browned. Discard the green onion. Pour the flavoured oil into a small bowl or ramekin with flour. Stir until combined.
  • Cut the dough into quarters and roll a portion into a large rectangle. Sprinkle salt and sesame seeds and brush with a layer of oil-flour mixture. Sprinkle with chopped scallion or chives.
  • Starting from the long end, roll the dough up like folding a hand fan or accordion. Cover the dough and rest for 15 minutes. Repeat the process and finish all of the remaining dough portions.
  • Roll each portion into a large pancake, approximately 5 inches in diameter.
  • Add 3 tablespoons of oil into a hot pan and fry the Green Onion Cakes until golden brown on one side (about 3-4 minutes). Turn over so both sides of the pancake are golden brown.
  • In a medium sized bowl whisk dipping sauce ingredients together. Serve with hot and crispy Green Onion Cakes.
