- 1/2 lb bacon
- 1 cup all purpose flour
- 1 cup cornmeal
- 2 tbsp white sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup corn
- 3/4 cup Buttermilk
- 1 egg beaten
- 1/4 cup chives finely sliced
- 1/2 cup cheddar cheese shredded
Cook bacon until browned and crisp. Drain on paper towel and crumble. Set aside. Reserve 1/4 cup bacon drippings.
Mix flour, cornmeal, sugar, baking powder and salt.
In small bowl, beat corn, buttermilk, egg, chives, cheddar cheese and bacon drippings.
Stir into flour mixture and fold in bacon pieces.
Bake at 375 F for 15-20 minutes.
