Ingredients

  • 1/2 lb bacon
  • 1 cup all purpose flour
  • 1 cup cornmeal
  • 2 tbsp white sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup corn
  • 3/4 cup Buttermilk
  • 1 egg beaten
  • 1/4 cup chives finely sliced
  • 1/2 cup cheddar cheese shredded

Instructions

  • Cook bacon until browned and crisp. Drain on paper towel and crumble. Set aside. Reserve 1/4 cup bacon drippings.
  • Mix flour, cornmeal, sugar, baking powder and salt.
  • In small bowl, beat corn, buttermilk, egg, chives, cheddar cheese and bacon drippings.
  • Stir into flour mixture and fold in bacon pieces.
  • Bake at 375 F for 15-20 minutes.
