Old Fashioned Jam Donut Muffins

- 1 3/4 cups all purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp nutmeg
- 1/4 tsp cinnamon
- 1/3 cup vegetable oil
- 3/4 cup white sugar
- 1 egg
- 3/4 cup milk
- 1/2 cup Raspberry Jam
- 1/2 cup melted butter
- 1/3 cup white sugar
- 1 tsp lemon zest
In a bowl, combine four, baking powder, salt, nutmeg and cinnamon.
In another bowl, combine thoroughly oil, sugar, egg and milk.
Add liquid ingredients to dry and stir only to combine.
Fill well-greased muffin tins half way with batter. Spoon a teaspoon of raspberry jam into the centre of each muffin cup. Top jam with additional batter until it each tin is full to the rim.
Bake Old Fashioned Jam Filled Donut Muffins at 350F for 20 minutes.
Shake muffins out of their tins immediately when done. While still hot, wash with melted butter and dip in white sugar and lemon zest.
