Ingredients

  • 2 cups All Purpose Flour
  • 1 tsp Baking Powder
  • 1 tsp Kosher Salt
  • 1 1/2 cups Brown Sugar
  • 2 Eggs
  • 2 tsp Vanilla Extract
  • 1 cup Salted Butter melted, cooled slightly
  • 1 cup White Chocolate Chips
  • 1/2 cup Raspberries
  • 1/2 cup Raspberry Jam

Instructions

  • Arrange the oven racks so one is in the centre position. Preheat oven to 350F.
  • Spray the bottom and sides of a 8x12 inch baking pan with nonstick cooking spray.
  • Whisk the flour, baking powder and salt together in a small bowl then set aside.
  • Combine the brown sugar and eggs in a medium bowl and whisk until the mixture is smooth and lightened in colour. Gradually add the butter, stirring with the whisk as you add it. Use the whisk to stir in the vanilla. Add the flour mixture and fold it in with a rubber spatula until almost no flour is visible.
  • Using a rubber spatula, transfer half of the batter to the prepared pan. Use the spatula to get the batter into the corners. Sprinkle with raspberries. Transfer the remaining batter into the pan and smooth out the top. Sprinkle with the white chocolate chips.
  • Drop in the jam in 1 tsp drops, distributing it over the surface of the batter. Draw a small paring knife back and forth through the batter, running it through the jam across the length of the pan and then back across the sides.
  • Place the blondies on the centre rack of the oven and bake for 30 minutes, until the batter is puffed up, rotating the pan from front to back halfway through the baking time. Remove the pan from the oven and put it on a cooling rack. Let the blondies cool to room temperature in the pan. Use a large knife to cut the blondies into 9 equal pieces.
