Ingredients

  • 1 oz Lime Juice
  • 1/4 cup Rhubarb chopped
  • 1 oz Simple Syrup
  • 6 Fresh Mint Leaves
  • 2 oz White Rum
  • Soda
  • 1 Skinny Rhubarb Stalk
  • 1 Fresh Mint Sprig
  • 1 Lime Wheel or Wedge

Instructions

  • In the bottom of a highball or Collins glass add lime juice, rhubarb, simply strup, and mint leaves. Muddle for 30 seconds.
  • Add the rum and ice. Top with soda and stir to mix and chill.
  • Garnish with rhubarb stalk, mint sprig and lime wheel.
