- 1 oz Lime Juice
- 1/4 cup Rhubarb chopped
- 1 oz Simple Syrup
- 6 Fresh Mint Leaves
- 2 oz White Rum
- Soda
- 1 Skinny Rhubarb Stalk
- 1 Fresh Mint Sprig
- 1 Lime Wheel or Wedge
In the bottom of a highball or Collins glass add lime juice, rhubarb, simply strup, and mint leaves. Muddle for 30 seconds.
Add the rum and ice. Top with soda and stir to mix and chill.
Garnish with rhubarb stalk, mint sprig and lime wheel.
