Ingredients

  • 1 lb Beets
  • 2 tbsp Lemon Juice
  • 2 tbsp Olive Oil
  • 1 cup Greek Yogurt
  • Salt and Pepper
  • 1 tbsp Parsley chopped
  • 2 tbsp Walnuts chopped

Instructions

  • Cut the tops of the beets and boil them in water for 30-40 minutes, until tender. Peel and shred them with a cheese grater.
  • Mix the lemon juice with the oil. Add yogurt and salt and beat well. Mix into the beats.
  • Pour into a serving dish and garnish with chopped parsley and walnuts.
