Ingredients

  • 1 1/3 cups Rolled Oats
  • 1 1/4 cups Shredded Coconut
  • 1 cup Whole Wheat Flour
  • 2/3 cup Butter
  • 1/2 cup Brown Sugar packed
  • 1/4 cup Brewed Coffee
  • 3 tbsp Honey
  • 2 tsp Vanilla Extract
  • 1 tsp Grated Orange Zest
  • 1 tsp Baking Soda

Instructions

  • Heat oven to 350 F with racks in upper and middle positions. Line 2 baking sheets with parchment paper.
  • In a large nonstick skillet over medium high heat, toast the oats, stirring until fragrant, about 5 minutes. Reduce heat to low and add coconut. Toast until golden, stirring for 1-2 minutes. Transfer to a large bowl. Stir in the flour. Wipe out the skillet.
  • Return the skillet to medium low and add the butter, sugar, coffee, honey, vanilla and orange zest. Cook, whisking, until the butter melts and the mixture boils. Off heat, add the baking soda and stir until completely combined. Add the oatmeal mixture and stir until combined.
  • Scoop heaping tablespoons of dough, spaced 2 inches apart, onto the prepared baking sheets. Bake until the cookies have risen and are golden brown but still soft at the centre, 8-9 minutes. Switch and rotate the pans half way through to ensure even baking.
  • Transfer cookies to a wire rack and cool.
