Rhubarb Ginger Simple Syrup
- 2 cups Rhubarb chopped
- 2 tbsp Ginger minced
- 1 cup White Sugar
- 1.5 cups Water
Rhubarb Ginger Gin Cocktail
- 2 oz Gin
- 2 oz Lime juice
- 3 oz Rhubarb Simple Syrup
- 5 oz Soda Water
- 2 dashes Rhubarb Bitters
- Lime Slice and Rhubarb Stalk Garnish
Rhubarb Ginger Simple Syrup
In a saucepan, combine rhubarb, ginger, sugar, and water. Bring to a boil over medium-high heat, then reduce heat and simmer 20 minutes. Remove from heat and allow to cool completely. Strain syrup through a sieve and reserve liquid.
Rhubarb Ginger Gin Cocktail
Fill a cocktail shaker with ice and add gin, lime juice, rhubarb syrup and rhubarb bitters. Shake well for 30-45 minutes until well combined.
Strain into a chilled highball glass filled with ice. Top with soda water and stir with a cocktail spoon.
Garnish with lime slice and rhubarb stalk.
