Ingredients

  • 1 3/4 cups all purpose flour
  • 1/2 cup white sugar
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1 cup strawberries sliced
  • 1 egg
  • 1 cup milk
  • 1/4 cup cream cheese
  • 1/4 cup vegetable oil
  • 1 tbsp lemon juice
  • 1 tbsp lemon zest

Instructions

  • Stir together dry ingredients in a large mixing bowl.
  • Combine egg, milk, cream cheese, vegetable oil, lemon zest and lemon juice. Fold into flour mixture, gently stirring just to moisten.
  • Add sliced strawberries and gently incorporate them into the batter.
  • Fill greased muffin tins and top with a sliced strawberry.
  • Bake at 375F for 18-20 minutes.
