- 1 3/4 cups all purpose flour
- 1/2 cup white sugar
- 3 tsp baking powder
- 1/2 tsp salt
- 1 cup strawberries sliced
- 1 egg
- 1 cup milk
- 1/4 cup cream cheese
- 1/4 cup vegetable oil
- 1 tbsp lemon juice
- 1 tbsp lemon zest
Stir together dry ingredients in a large mixing bowl.
Combine egg, milk, cream cheese, vegetable oil, lemon zest and lemon juice. Fold into flour mixture, gently stirring just to moisten.
Add sliced strawberries and gently incorporate them into the batter.
Fill greased muffin tins and top with a sliced strawberry.
Bake at 375F for 18-20 minutes.
