- 1 3/4 cups all purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 3 tsp ground ginger
- 1/2 tsp salt
- 1/4 tsp cayenne
- 1/4 cup butter
- 1 egg beaten
- 1/2 cup milk
- 1/2 cup corn syrup
- 1 1/2 cups old cheddar cheese grated
- 2 Apples grated
Mix dry ingredients in a bowl.
Melt butter. Add beaten egg, milk and corn syrup and mix well.
Combine dry ingredients with egg mixture and mix until moistened.
Peel and core one apple. Grate apple and add to mixing bowl with grated cheese. Stir until batter is fully combined.
Remove the core of the second apple and slice into large chunks. Keep the skin on as the apple pieces will decorate the top of each muffin.
Fill greased tins with batter and top with apple chunks.
Bake Cheddar Apple Muffins at 375F for 15-20 minutes.
