My fondest memories growing up as a kid were waking up in the morning at our family cottage and smelling freshly baked muffins. My family’s two favourite recipes were Banana Oatmeal Chocolate Chip Muffins and Lemon Blueberry Muffins. If looking to celebrate, you can easily transform our Blueberry Banana Muffins into a healthy cupcake by topping with an easy lemon icing. The tart tang of lemon pairs perfectly with sweet blueberries.

  • 1 1/4 cup icing sugar
  • 3 tablespoons lemon juice
  • zest of one lemon
  • 2 tablespoons soft butter

In a small bowl whisk together icing sugar, fresh lemon juice, zest and soft butter until velvety smooth. Once muffins are cooled, dunk each muffin top into the lemon glaze and let set for 10 minutes before serving.

Ingredients

  • 1 1/2 cups wheat bran
  • 2 tablespoons flax meal
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 eggs
  • 2 ripe bananas
  • 1/4 cup Greek yogurt
  • 1/4 cup canola oil
  • 1/4 cup packed brown sugar
  • 1 cup milk
  • 1/2 cup oatmeal
  • 1 cup blueberries

Instructions

  • Preheat oven to 375F. Grease muffin tin with non-stick cooking spray.
  • In a small bowl soak oatmeal in milk for 30 minutes.
  • In a large bowl stir bran, flax, flour, baking powder, baking soda, salt, nutmeg and cinnamon.
  • In a blender add eggs, bananas, yogurt, canola oil, and brown sugar and blitz until smooth.
  • Pour banana mixture and soaked oats over dry ingredients. Fold together with a rubber spatula, adding in blueberries just before fully incorporated.
  • Using a large spoon fill blueberry banana muffin batter into greased tins.
  • Bake for 25 minutes and let cool before serving.
  • Store leftovers in an air-tight container in the freezer for up to one month.
