Pumpkin Spice Muffins

Ingredients

  • 3 cups whole wheat flour
  • 3 tbsp flax meal
  • 1 cup white sugar
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1/4 tsp ginger
  • 1/4 tsp mace
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 2 cups grated carrots
  • 1 apple peeled, cored and grated
  • 1 pear peeled, cored and grated
  • 1/2 cup raisins or dried cranberries
  • 1/2 cup chopped dried apricots
  • 1/2 cup chopped nuts pecan, walnut, or hazelnut
  • 1/2 cup dried coconut
  • 3 eggs
  • 1 cup whole oats
  • 1 cup pumpkin puree
  • 1 cup milk
  • 1/2 cup canola oil
  • 2 tsp vanilla
  • 1/4 cup pumpkin seeds

Instructions

  • In a large bowl mix together flour, flax, sugar, baking soda, spices, and salt.
  • Stir in carrot, dried fruit, nuts, coconut, pear and apple.
  • In a medium bowl soak oatmeal in pumpkin, milk, beaten eggs, canola oil and vanilla.
  • Stir into flour mixture until batter is just combined.
  • Pour batter into a well-greased muffin tin and sprinkle with pumpkin seeds.
  • Bake at 350 for 25 minutes.
