My final feast in Banff and my very last culinary adventure in Alberta would be at The Bison Restaurant. I was elated to have an old University of Guelph friend who I hadn’t seen in years join me at the table. Candice has been working at The Fairmont Banff Springs Hotel for several years now and I was ever so glad she was able to join me for dinner to help celebrate my farewell to Alberta.
The Bison is located in the heart of Banff village and offers a stunning sun drenched second floor terrace offering panoramic views of the Rocky Mountains. The bartender here has a top notch cocktail program while the team working over the stove keep busy in an open concept kitchen which produces haute Rocky Mountain cuisine inspirations.
During my three days in Banff I had the opportunity to meet a handful of passionate local foodies from top chefs to enthusiastic servers and restaurant managers. Everyone of course was interested in knowing where I would be eating during my stay and it seemed like everyones face beamed when I mentioned The Bison. A clear local favourite.
Highlights of my final feast in Alberta at The Bison included: bison carpaccio with a whisper of truffle, fried green tomatoes sandwiched between creamy buffalo mozzarella, Alberta New York Striploin with chimichurri duck breast with bc cherry pie and a sweet meets savoury cast iron fried chicken and waffles.
