Named in memory of Henry’s wife, widow and family matriarch, Catharine Smith. Careful selection and the use of traditional grape varieties (Chardonnay & Pinot Noir) makes this wine a modern Niagara expression of a time honoured wine style. The secondary fermentation is done in bottle and each wine is aged for approximately 24 months on the lees before disgorging. This bottle by Henry of Pelham is one of my families favorites for Thanksgiving and Christmas turkey feasts. Cuvee Catharine is the most exceptional sparkler coming out of Niagara region and would be without a doubt my personal choice for New Years Eve and my very own wedding (if that day ever does come…)
