Respected as one of the foremost producers of Riesling in North America, Cave Springs is my go to when I want a crisp and cold VQA Riesling.
On the nose, lime, yellow grapefruit and crushed stone aromas are at the fore, with scents of chamomile and white peach in the background. In the mouth, the wine is dry, medium bodied and quite supple in feel, yet with a marked acidity that brings freshness and shine. In the middle, the wine is defined by its yellow grapefruit flavours and chalky feel. The finish is crisp and racy with lingering notes of citrus rind and anise.
