These muffins remind me of my childhood. I became obsessed with baking when I was 5 years old. Bought my first bread maker in grammar school and used to spend my days in the kitchen baking and then canoeing to the resort down the lake and selling my bread, muffins, scones and cinnamon rolls to the rich lounging in their muskoka chairs. These muffins are great spread with cream cheese!

1 c white sugar
3/4 c canola oil
2 eggs
1 tsp baking soda
1 tbs warm water
1 tsp vanilla
1 1/2 c whole wheat flour
1/2 tsp salt
1 tsp baking powder
3 tbs flax
1/2 cup oats
1 c raisins
1 c grated carrot
1/4 c whole milk
Beat sugar, oil and eggs.
Dissolve baking soda in water and add to egg mixture, along with vanilla. Mix well.
Add flour, oats, flax, salt, baking powder and mix well until moistened.
Stir in raisons and grated carrots. Add milk to moisten.
Bake at 375 F for 15-20 minutes.
Those muffins would make for one delicious breakfast. It’s certainly a good way to eat veggies and enjoy it.
